There's nothing about what you just said that requires a GUI. ChUI works well, too. (Isn't that right, Hal?)
The program could be written to run in a character-mode environment, so that it would run equally well in an xterm. Maybe even better, if it were mouse-aware. An additional feature that could be really helpful is to save the command in a small script in the user's home directory, whence it could easily be re-used.
Personally I just want something which prevents the need to look up the command line options every time I want to try something different. That would suffice for mencoder and transcode. However, the GUI was to be for my friend with his interest in Astrolog.
