I believe that the Exchange Connector allows Evolution to use Exchange's native 
MAPI transport - much faster than IMAP, much easier to do message sorting, 
searching, moving, etc. Also allows connection to the calendaring and address 
book functions, as well as some of the other Outlook/Exchange features.

You probably can't send mail off-campus because the smtp server won't forward 
or relay it outside the net.  If so, it could be configured better, but as you 
say it's unlikely given budget (and hence staffing) constraints.  Using IMAP 
there's secure authentication so they can allow you to send outside.
