I am partial to a Postfix+Cyrus+procmail+Spam Assassin setup.  Cyrus is
definitely not the easiest IMAP server to install and configure, but is
the fastest that I have seen.  Here is a link on setting this up, though
for this setup to be able to truly handle multiple domains requires some
extra work.
